recipe: baked porkchops with mushroom brown rice.

This recipe can really grow or be made for one person, so excuse the measurements. I made this last night for two people. Enjoy!

4 Bone-In Thin-Cut Pork Chops (or small chicken breasts)
1 Can Low-Sodium, Low-Fat Cream of Mushroom Soup
3/4 Cup Brown Rice
3/4 Cup Water
Salt and Pepper to Taste

Mix the rice, water and canned soup in a bowl and dump the mixture into a baking/casserole dish (or your brownie pan since you won’t be using that anymore!). Nothing too big though. Salt and pepper your pork chops and lay them on top of the rice mixture in one layer (don’t overlap). Bake on 400 for about 20 minutes or until the pork chops are opaque and the rice is softened.

Serve with a side salad, some green beans or other vegetable of your choosing.

    But I’m thinking we can substitute the chop with a nice, lean steak or some chicken breasts and we can make this happen…. Sounds yummy…. :)
